Chunky Slow Cooker Chicken Tortellini "Noodle" Soup

Chicken noodle soup is SO MUCH BETTER with tortellini! 



You get the classic, heart and soul warming chicken noodle soup taste with the bonus of tender pillows of cheese wrapped in each bite of pasta.  I don't know if I've ever appreciated tortellini more.





To make this soup, all you do is dice some veggies, throw them in your crockpot along with some whole chicken breasts (my favorite part, no cutting raw chicken!), spices and chicken stock and let it brew on cruise control.  With practically no effort, you can be slurping the best chicken "noodle" soup you've ever tasted.  I hope it warms your heart and soul!

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 1/2 cups carrots, peeled and sliced
  • 2 cups celery, sliced
  • 1 onion, diced
  • 5 garlic cloves, minced
  • 11-12 cups chicken broth (12 for less "chunky")*
  • 1 tablespoon chicken bouillon
  • 1 tablespoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 - 1/2 teaspoon red pepper flakes
  • 3 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 26 oz. package of fresh cheese tortellini – UNCOOKED**
